Good Indian Food

I love food. Run a catering busines . Love cooking - find it therapeutic and totally enjoyable. So, thought - why not share my recipes / ideas with the world and learn some more from others - hence this blog.

Made a fantastic quick recipe last night with Paneer (indian cheese). Thought, I will share it with you all.

- 250 gms Paneer (Indian cheese)
- 3 green peppers, cut into large chunks
- 2 red peppers, cut into large chunks
- 2 large red onions (some finely chopped, some cut into chunks)
- 1 green chilli – finely chopped
- 1” ginger, grated/ crushed
- 2 cloves garlic, grated/ crushed
- 1 tsp madras curry powder
- 1 tsp turmeric
- Salt to taste
- 1 tsp oil

Method:
- Cut the paneer into long thin rectangle shapes.
- (If using ready made paneer, then soak in hot water before cutting it)
- Heat a Wok/ large frying pan on medium heat
- Add oil
- Add onions, ginger and garlic together
- Sauté until onions (finely chopped ones only) go transparent
- Add the peppers and chunky onions
- Cook on high heat until the peppers are just soft – don’t overdo the peppers
- Add the curry powder, turmeric, salt and the green chilli
- In parallel, heat the paneer on the griddle pan to get the red criss-cross lines
- Now add the heated paneer to the pepper & onion mixture
- Toss the pepper, onion and paneer mix well and cook for about 2 – 3 minutes
- Serve with hot chapattis or use as a filling for tortilla / chapatti wraps
